    Cilantro Chicken Tacos with Broccoli Slaw

    Cilantro Chicken Tacos with Broccoli Slaw

    Ingredients

    • 2 large chicken breasts (boneless and skinless)
    • 2 tablespoons coriander cilantro chutney sauce
    • 2 tablespoons olive oil
    • 1 tablespoon minced garlic
    • 3 limes
    • 1 small package organic broccoli slaw with red cabbage and shredded carrots
    • 2 tablespoons rice wine vinegar
    • 1 tablespoon of honey
    • 4 tablespoons of feta cheese
    • 1 avocado
    • 2 tablespoons plain Greek yogurt
    • 1 tablespoon sriracha sauce
    • Salt and pepper to taste
    • Garlic powder
    • 6 Dempster's small whole wheat tortilla shells

    Instructions

    1. Slice chicken breasts in long, skinny pieces and place in a bowl.
    2. Cover with coriander cilantro chutney and let sit for 30 minutes.
    3. In a bowl, combine the broccoli slaw, rice wine vinegar, juice of one lime, honey and salt and pepper to taste then set aside.
    4. Cut avocado in half and remove pit and shell.
    5. Place avocado in blender or Magic Bullet and add yogurt, juice of 2 limes, garlic powder and salt and pepper to taste.
    6. Blend until combined and place in a bowl and keep refrigerated until use.
    7. Heat skillet on high heat with olive oil.
    8. Saute chicken breasts until cooked through.
    9. Add garlic and saute until just cooked.
    10. Remove from heat and place in a dish for serving.
    11. Assemble tacos by placing chicken, feta, broccoli slaw and avocado cream. Top with sriracha if desired.
    12. Fold and enjoy!
