    Sweet Potato and Lentil Soup

    So, it was freezing in Edmonton, Alberta the other day and I was bundled up in my fuzzy house robe wondering what I had on-hand in the pantry, fridge and freezer to make a belly-warming meal. This is what I came up with, and it’s maybe one of the best soups I have made so far. If you try it, I hope you enjoy it!

    Sweet Potato and Lentil Soup


    • 3 small to medium sweet potatoes
    • 2 chicken breasts (I used pre-seasoned, on-the-bone chicken breasts from Costco)
    • 2 cups of sliced carrots
    • 1 onion, sliced into small pieces
    • 1.5 cups of lentils
    • 8 cups of chicken stock (I used home made stock)
    • 1 tbsp of crushed garlic
    • 2 tbsp olive oil
    • 1 tbsp cumin
    • 1 tbsp coriander
    • 1 tbsp black pepper
    • 1 tbsp salt
    • 2 tbsp onion powder
    • 1 tbsp ginger powder
    • 1 tbsp garlic powder
    • 1 tsp poultry seasoning


    1. Spray or rub down the insert for a crock pot with olive oil
    2. Peel and cut sweet potatoes into bite sized cubes and place in bottom of crock
    3. Add lentils
    4. Add carrots onion and all seasonings and remaining olive oil and mix completely
    5. Place chicken breasts on top of vegetable and lentil mix
    6. Pour stock over all
    7. Set crock and cook (high for 5 hours, low for 8-10 hours) stirring every hour or so
    8. Once done, remove chicken breasts and shred apart
    9. Place back into soup mixture and allow to continue cooking for additional 15 minutes
    10. When done, stir well. You should see the soup start to integrate and thicken slightly. This is the lentils and sweet potatoes breaking down and thicken the soup. You can add some sour cream when serving, however I preferred it this way without adding extra fat and calories.
    11. Serve it up in a bowl and curl up with your favourite person or movie on a cool day.
